Bengali cuisine is a treasure trove of flavours from a variety of foods. It boasts of many signature dishes that have caught the fancy of many people across the country. However, their parathas are slightly different than the regular ones, and are fondly called porothas. Moglai porotha is a popular Bengali breakfast dish, which is also an equally popular street food in the city of Kolkata.
For the porotha, dough is prepared with all-purpose flour, refined oil and warm water or milk. The porotha is stuffed with a delectable filling of boiled minced meat, combined with onions, green chillies, ginger-garlic paste and coriander leaves. Breadcrumbs are also added to give a slight crunch to the porotha. The range of spices that includes Bengali garam masala, enhances the flavour of the stuffing. The stuffed porotha is fried to come up with a crispy, light golden treat.
Pair this porotha with green mint or coriander chutney, or with curd, to enjoy a special breakfast meal that you and your family are sure to fall in love with.
